Skytramp 2023
​
A buzzard on every pole. The ragged and dishevelled silhouette of this ubiquitous scavenger can be seen high above the population of wild apples which come together to make this cider. Due to the peculiarities of the 2023 season, each of 16 unique wild trees was harvested, pressed and fermented individually then blended post-fermentation to create this cider. Still and tart, it has a minerality reminiscent of the granite tors which punctuate Cornwall’s spine.

Twelveheads 2023

This still, spontaneously fermented cider is made from a population of seedling apples found around the village of Twelveheads. As with most of what we make, it’s bone dry and tart but also has a whisper of smokiness, gravel and willowy dells. You might like it with oily fish.

Peak & Trough 2023
​
OK, full disclosure, it’s over-conditioned. Put simply, if you fail to make this VERY cold, it will gush itself over whatever surface you happen to have opened it on. Even then, it’s suggested you open it very slowly. We weren’t sure about releasing this because of its excessive carbonation, but actually, once its calmed down, we think you’ll like it. Peak & Trough cider is made from the highest and lowest wild apples in Cornwall. There is a population of seedlings at around 700’ and another at about 8’ above mean high water. It’s tart, mineral and salty, reflective of the marginal conditions in which these apples not only survive, but thrive – they are irredeemably biennial however. Did we mention it needs to be cold? 6.5%abv 750ml
Longarm 2023

Longarm cider is made with mostly Cornish dessert varieties such as Cornish Gillyflower and Red Roller and a small amount of Black Dabinett from a small orchard in Porthallow. However, in 2023 some of the trees were blind. Fortuitously, we were offered a load of quince, which was macerated with the apple pomace for 24hrs before pressing. Spontaneously fermented, this still cider presents with the perfume of the quince and a dry, tart vinous finish. Light, crisp and aromatic. Chill lightly before serving.

All the Russets 2023
​
All The Russets cider is made from a combination of Ashmead’s Kernel, Egremont Russet and the near legendary seedling tree Coverack Russet, subject to pilgrimage and homage across the globe. The first two varieties lend a nutty dignity to this medium pét nat cider, whilst the Coverack brings a soft and mellow tannin commensurate with standing fast through years of Atlantic storms. Chill before opening.

Aciiid 2023
​
This still, spontaneously fermented, medium-dry cider is blended from all the small, yellow, spherical apples we could find. They’re mostly wild fruit with the addition of early Manaccan Primrose and late Dufflin ciders. As the name suggests, it’s tart, but it’s also aromatic and tannic. House or field, white gloves or no, it’s your shout.
